- 1 and 3/4 cups of whole wheat flour or oat flour
- 2 cups of uncooked oatmeal
- 1/4 cup of brown sugar
- 1/2 cup of white sugar
- 1/4 cup of vegetable oil
- 1/4 cup unsweetened applesauce
- 1/4 cup of milk or soy milk
- 1 egg
- 1/2 teaspoon of baking soda
- 1 and 1/2 teaspoons of pure vanilla extract
- A pinch of salt
- 1 cup of semi-sweet chocolate chips
Mix together the dry ingredients in a bowl and set aside. In another bowl beat the egg until it begins to lighten in color. Add the oil, applesauce and milk and beat until smooth. Beat in the white and brown sugar. Add the vanilla and beat until smooth. Slowly add the dry ingredients until a sticky cookie batter is formed. Fold in the chocolate chips. Preheat your oven to 350 degrees fahrenheit. On a non-greased cookie sheet, drop the cookie batter in spoonfuls. Bake the cookies for about eight minutes until they are crispy on the edges but still slightly doughy in the center. Eat them while they are warm!
